四手菜單中每道主菜排序更有巧思，蔡老師及主廚上田陽三匠心獨運烹飪工藝，來得更直接，呈現出原汁原味。

甘鯛立鱗，甘醋，韭黃，生薑，九條蔥
紅色馬頭魚，又名甘鯛魚；配上甘醋酱汁甜酸味、源自京都的葱花與鳞片，口感溫潤，完美感受到潮菜的溫柔。
